Easy Salmon, 3 Ways

In a weeknight dinner rut? You're in luck — these easy, flavorful salmon dishes will take your taste buds straight into the weekend.

Ingredients

  • 1 tbsp grated ginger
  • 3 garlic cloves, minced
  • 3 tbsp Thai curry
  • 1 lime
  • salt and pepper to taste
  • 1 tbsp brown sugar
  • 1 tbsp fresh chili
  • 1 1/2 cups coconut cream
  • 1 salmon fillet
  • 3 finely chopped basil
  • 2 tbsp olive oil
  • 1 tbsp chili
  • Extra: Rice

Steps

  1. Season salmon fillet with salt and pepper.
  2. In a large pan, add olive oil and sear the salmon skin side up for about 1 minute until it's lightly golden. Then transfer the salmon to a clean tray and set it aside.
  3. Using the same pan you seared the salmon in, add 1 tablespoon oil, ginger, garlic, chili, curry, and fry it for 1 minute. Then pour the coconut milk and stir.
  4. Allow the sauce to simmer for 2-3 minutes.
  5. Add salt and pepper to taste.
  6. Add the basil and stir.
  7. Lower the heat and add each salmon fillet in the sauce and allow to simmer for 4-5 minutes or until salmon is cooked.
  8. Serve with rice and fresh lime.

Ingredients

  • 1 salmon fillet
  • Salt and pepper to taste
  • 2 tbsp honey
  • 1 tbsp warm water
  • 2 tbsp orange juice
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/2 orange, sliced into wedges
  • 1 tbsp chopped parsley
  • Extra: baked potatoes

Steps

  1. Season the surface of the salmon with salt and pepper.
  2. In a skillet, add olive oil and fry the salmon, skin side down first, for about 1 minute.
  3. Turn the salmon over and cook for 1 minute. Turn it over again so the skin side is at the bottom.
  4. Mix the honey, water, orange juice and a pinch of salt. Stir to combine well.
  5. Add the garlic into the skillet, sauté until slightly browned. Add the honey mixture and orange
  6. wedges, reduce the sauce until it's sticky.
  7. Top the salmon with parsley and serve with baked potatoes.

  • 1 garlic clove
  • 1/4 cup walnuts
  • 3 tbsp fresh basil
  • 2 tbsp breadcrumbs
  • salt and pepper to taste
  • 1 tbsp olive oil
  • Extra: fresh salad

Steps

  1. For the pesto:
  2. Chop the basil with garlic, walnuts, olive oil, breadcrumbs, salt and pepper to taste.
  3. Brush the top of the salmon fillet with a little olive oil, then top the salmon fillet with the pesto crust mixture, pressing down well, then add the parmesan cheese on top.
  4. Place the fillet onto a baking tray and bake for 10 minutes.
  5. Serve with fresh salad.
