• 1 salmon fillet
  • 3 tbsp grated parmesan cheese
  • 1 garlic clove
  • 1/4 cup walnuts
  • 3 tbsp fresh basil
  • 2 tbsp breadcrumbs
  • salt and pepper to taste
  • 1 tbsp olive oil
  • Extra: fresh salad


  1. For the pesto:
  2. Chop the basil with garlic, walnuts, olive oil, breadcrumbs, salt and pepper to taste.
  3. Brush the top of the salmon fillet with a little olive oil, then top the salmon fillet with the pesto crust mixture, pressing down well, then add the parmesan cheese on top.
  4. Place the fillet onto a baking tray and bake for 10 minutes.
  5. Serve with fresh salad.
