Easy Strawberry Pie
You'll love this easy to make fluffy strawberry pie with a crumbly crust!
Ingredients
- Crust
- 250g graham crackers
- 125g unsalted butter (melted)
- Cheesecake mixture
- 2 packets of strawberry jell-o
- 1 cup boiling water
- 500g cream cheese blocks (not spreadable kind)
- 250ml thickened whipping cream
- ½ cup powdered sugar
- 1tsp vanilla extract
- 3 drops pink food gel
- 2 cups chopped strawberries
Steps
- Crust
- Add Graham crackers to a food processor and pulse until it forms fine crumbs. Then add melted butter and pulse until crumbs are well coated.
- Transfer to an 8” spring form cake pan and use the back of a spoon to flatten on the bottom and sides of the pan. Get it nice and compact and then chill for 1 hour.
- Cheesecake mixture
- Add Jell-O powder and boiling water to a small mixing bowl and mix until powder is melted. Set aside to cool but not set.
- Add the cream, powdered sugar and vanilla extract to a large mixing bowl and whip on high speed until you reach stuff peaks
- Add cream cheese to a large mixing bowl and mix until the cream cheese breaks apart a little and becomes smooth. Add cooled Jell-O mixture and pink food gel and mix on low speed until it’s well combined.
- Next add the cream into the cream cheese mixture and fold in. Then add the chopped strawberries and gently fold in.
- Transfer to prepared pie crust and chill for 3 hours until set.
- Add some more whipped cream on top to decorate before serving.
