  • 250g graham crackers
  • 125g unsalted butter (melted)
  • Cheesecake mixture
  • 2 packets of strawberry jell-o
  • 1 cup boiling water
  • 500g cream cheese blocks (not spreadable kind)
  • 250ml thickened whipping cream
  • ½ cup powdered sugar
  • 1tsp vanilla extract
  • 3 drops pink food gel
  • 2 cups chopped strawberries


  1. Crust
  2. Add Graham crackers to a food processor and pulse until it forms fine crumbs. Then add melted butter and pulse until crumbs are well coated.
  3. Transfer to an 8” spring form cake pan and use the back of a spoon to flatten on the bottom and sides of the pan. Get it nice and compact and then chill for 1 hour.
  4. Cheesecake mixture
  5. Add Jell-O powder and boiling water to a small mixing bowl and mix until powder is melted. Set aside to cool but not set.
  6. Add the cream, powdered sugar and vanilla extract to a large mixing bowl and whip on high speed until you reach stuff peaks
  7. Add cream cheese to a large mixing bowl and mix until the cream cheese breaks apart a little and becomes smooth. Add cooled Jell-O mixture and pink food gel and mix on low speed until it’s well combined.
  8. Next add the cream into the cream cheese mixture and fold in. Then add the chopped strawberries and gently fold in.
  9. Transfer to prepared pie crust and chill for 3 hours until set.
  10. Add some more whipped cream on top to decorate before serving.
