Cookie Straws


  • 4 egg whites
  • 1 cup sugar
  • 1 cup all-purpose flour
  • Pinch of salt
  • 5 tablespoons butter
  • 3 tablespoons heavy cream
  • 1/2 teaspoon vanilla
  • Wooden skewers or straws


  1. Preheat oven to 400 degrees. Prepare a baking sheet with a silicone mat.
  2. In a medium bowl, beat egg whites and sugar until fluffy. Add the rest of the ingredients and blend until smooth.
  3. Drop a teaspoon of the batter on prepared baking sheet and spread to a thin 3 inch by 7 inch rectangle using an offset spatula. Bake for 4 to 6 minutes or until the edges just start to brown. Quickly roll the cookie onto a straw or skewer and lay seam-side down until cool.
