Eggs in a Baguette

Guaranteed you haven't had a sandwich like THIS before.


  • For the cheese sauce:
  • 3 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded Gruyere
  • 1/2 teaspoon nutmeg
  • Salt and pepper, to taste
  • For the baguette:
  • 1 large baguette
  • 2 tablespoons olive oil
  • 12 slices ham, thinly sliced
  • 6 large eggs
  • 1 teaspoon coarse sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped chives


  1. Make the cheese sauce: In a small saucepan, melt butter and add flour. Continue to stir until flour darkens slightly. Slowly pour in milk and continue to stir over medium-low heat until mixture thickens. Stir in Gruyere and melt until smooth. Season with nutmeg, salt and pepper and allow to cool slightly while baguette is assembled.
  2. Make the baguette boat: Preheat the oven to 350 degrees, and line a baking sheet with parchment paper.
  3. Slice the baguette in half horizontally. Cut 6 evenly spaced 3-inch holes in the top half of the baguette. Brush entire loaf with olive oil. Layer ham over the bottom half of the loaf. Top with cheese sauce and top of baguette. Line each hole with ham, and break an egg into each hole. Season with salt and pepper. Bake for 10 to 12 minutes until whites are set and yolks are still a bit runny. Cut baguette into pieces to serve. Top with chives.
