Steps
- Preheat the oven to 350˚F (180˚C)
- Lightly grease a muffin tin. Place your toppings of choice in the cups, then fill with egg whites. Season with salt and pepper.
- Bake for 15 minutes, or until the whites have set. Serve hot.

- 5 large eggs
- ⅓ cup heavy cream, or whole milk
- 2 slices bacon, cooked and crushed
- 4 oz cheese, shredded
- 2 green onions, thinly sliced
Steps
- In a medium bowl, mix eggs, cream, bacon, cheese, and onions.
- Cut a long rectangle through the top of the baguette and partially unstuff the baguette.
- Spoon the mixture into the baguette.
- Bake for 25 minutes at 350˚F (175˚C).
- Cut and serve while still warm.

Baked Eggs Benedict
- 6 slices ham, canadian-style bacon
- 6 eggs
- 3 english muffins, split in halves
Hollandaise Sauce
- 3 egg yolks
- 1 tsp white wine vinegar
- ½ cup butter, melted
- 4 tbsp lemon juice, 2 lemons
- Pinch of cayenne pepper.
- Pinch of Salt

Baked Eggs Benedict
- Grease a large muffin tin. Place a slice of ham in each tin, then crack an egg over each slice of ham. Cover with tin foil, then bake at 350˚F(175˚C) for 8-10 minutes. (eight minutes if you like your yolk very runny.)
- Place a toasted English muffin half down, layer the ham and egg cup on top of the English muffin, then drizzle your hollandaise sauce on top.
Hollandaise Sauce
- Using a double boiler over medium heat, whisk together three egg yolks and 1 tsp white wine vinegar until well mixed.
- Slowly pour melted butter into the egg yolk mixture, while constantly whisking. If hollandaise gets too thick, add a teaspoon or two of hot water.
- Remove from heat, whisk in lemon juice, salt, and cayenne pepper.

- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika
- 6 eggs
- ⅓ cup milk
- 6 bacon, sliced
- 1 cup cheddar cheese
- 1 tbsp fresh chives

- Preheat oven to 350˚F (175˚C)
- In a skillet, cook bacon pieces until crispy. Remove bacon and set aside.
- Add hash browns to skillet. Season with salt, pepper, and paprika. Mix, then spread the hash browns so they take the shape of the pan and form a nest.
- Cook hash browns for roughly 7 minutes on medium so that the bottom forms a crispy crust.
- In a medium bowl, whisk eggs, milk, chopped bacon, and cheddar cheese.
- Pour egg mixture over hash browns and spread evenly.
- Bake for 20 minutes, or until the surface is golden brown and eggs are cooked through.
- Sprinkle fresh chives, slice, and serve while hot.
