emoji Whoopie Pies

Ingredients

  • 250 milliliters skim milk

  • 1 tablespoon vinegar

  • 275 grams Butter, Softened

  • 200 grams Sugar

  • 1 egg

  • Yellow Food Colouring

  • 2 teaspoons vanilla

  • 450 grams Plain Flour

  • 1/4 teaspoon baking soda

  • Pinch of salt

  • 250 grams icing sugar

  • Edible Googly eyes

  • Edible markers in black and red

Instructions

  1. First make a buttermilk by combining the vinegar and milk in a small bowl. Stir and then set aside.

  2. Preheat oven to 350˚F. Line 2 baking trays with parchment paper. In a mixing bowl, cream 125 grams of butter and the sugar together until pale and creamy then beat in the egg, yellow food colouring and add 1 teaspoon of vanilla extract.

  3. In a separate bowl add the flour, baking soda and salt, mix. Gradually add spoonfuls of the flour mixture to the butter mixture, mixing well after each addition, along with a few glugs of buttermilk to make a smooth, thick cake mixture. You may not need all the buttermilk.

  4. Place batter in a piping bag or large freezer bag and cut a one inch opening in one of the corners. Gently pipe out the batter on to the baking trays to make even mounds roughly 1 1/2 inches in diameter. Allow room for spreading. Bake in the oven for 12-14 minutes until risen, lightly golden and firm to the touch. Cool for 5 minutes on the trays before transferring to a wire rack to cool completely.

  5. Decorate the top side of half of the whoopie pies by drawing emoji faces using the edible markers. Attach the googly eye with a small dab of icing.

  6. For the icing, whisk together the remaining softened butter, 1 teaspoon extract and icing sugar until smooth and spreadable. Place in a piping bag with a star tip and carefully pipe onto the flat side of one of the pies. Place the second pie on top and serve.

- Today we are making Emoji Whoopi Pies. I'm really stoked about this movie this summer. Ah, I'm excited to go see it. And in honor of it I thought I would make some cute little whoopi pie snacks from themed emojis. My favorite ones in fact. So we're gonna get started. It's a really simple recipe. It's a great on to make even if you didn't want them emojified. So in my milk I'm gonna add a little bit of vinegar, that's a cheats way of making some buttermilk. So it's about a tablespoon of vinegar to 250 mils of milk. Give that a stir and just set it aside. Now I've got my flour premeasured, about 450 grams of flour. To it I'm gonna add a pinch of salt and a quarter teaspoon of baking soda. And now on to my stand mixer. You could always do this with an electric mixer or a handheld one. You know what I'm talkin' about. In here I am going to cream together my softened butter and the sugar. We're gonna do this until it is pale and light and fluffy. Great, now I can go in with my egg and vanilla and mix that together. Beautiful, nice and smooth. And then the final thing to go in this mix is that iconic emoji color. I'm doing a nice yellow saturated food coloring. I like using the gel coloring 'cause then you don't actually have to use as much and doesn't dilute your mixture. So, that's a little pro tip for ya bud. Get a toothpick here. We're gonna get a good hunk in there. And give that a mix. Okay, nice and smooth. Now I wanna incorporate my dry ingredients as well as the buttermilk. I'm gonna do one part dry, then a little bit of buttermilk, then one part dry, and then we'll finish up with the buttermilk so it's nice and smooth. Alright, so I have transferred my whoopi pie dough into a piping bag. That's my preferred method, although you could use spoons. Ah, but I like perfect circles. So I'm gonna pipe out little dollops onto my baking sheet covered in parchment paper. Just like that! Awesome, so this is now ready to bake at 350 degrees for 12 to 14 minutes, or until completely cooked through. Alright, so our whoopi pies have cooled completely and in the mean time I made a standard vanilla buttercream. I put it in a piping bag and I put a 'lil star tip on it to make it look fancy. So, now were are ready to make emojis. So we're gonna grab the bottoms of each of these little guys, and I'm gonna start icing. Start in the center, go with the same easy pressure. Twirl around, just like that. Alright, now that I have all of my bottoms iced, I'm gonna get my tops figured out. So, these are gonna be the emojis. Now using my trusty phone, make sure I don't accidentally message someone. Let's find some emojis, how 'bout? My favorite ones are Winky Face, Kissy Face, Blushy Face, uh, Sunglasses Face. Alright, let's see if I can recreate these. I've got some edible food coloring markers. I'm gonna try my best you guys. I'm not the best drawer in the world. So if you're good, this is gonna come very naturally. If you're not good, welcome to the club. Hey that doesn't look so bad!
