Don't you wanna, wanna take a bite of this Fanta-flavored cheesecake?
200g graham crackers
125ml unsalted butter, melted
250g cream cheese, room temperature
250ml cream, warm
1 tsp vanilla
Zest and juice of one orange
1 cup powdered sugar
2 tbsp powdered gelatin + ¼ cup water, cold
5 drops brown food gel
8 drops orange food gel
Orange Soda Jelly
1 cup orange soda
2 tbsp powdered gelatin + ¼ cup orange soda
Add graham crackers into a food processor and blitz until you reach crumbs. Add melted butter and blitz to coat the crumbs.
Add the crumbs to a loose bottom tart tin. Use the back of a spoon to firmly press into the bottom and sides of the tin. Chill.
Add the water and gelatin to a small mixing bowl and mix until well combined. Microwave for 30 seconds to melt.
Add the cream cheese, cream, vanilla extract, orange zest, orange juice and powdered sugar into a food processor and process until smooth. Make sure you scrape the bowl down at least once.
Add the melted gelatin and process until smooth.
Add about ¼ cup of the mixture into two separate bowls. Add 2 drops brown food gel and 3 drops orange food gel to one bowl and use a spoon to mix until well combined.
Add 3 drops of brown food gel and 5 drops orange food gel into the other bowl and mix until well combined.
Add both coloured cheesecakes to two separate piping bags fitted with a Wilton #2 tip.
Pour the white cheesecake mixture into the chilled tart. Pipe orange slice shapes using the darker orange into the cheesecake. Use a toothpick to clean up if you need to. Then pipe the lighter orange cheesecake mixture in the middle of the shapes to create the segmented parts of the orange slices. Set aside in the fridge to chill for 3 hours.
Orange Soda Jelly
Add the orange soda into a large microwave safe bowl and microwave for 1 minute. Set aside.
Add the orange soda and gelatin to a small mixing bowl and mix until well combined. Microwave for 30 seconds to melt.
Add the melted gelatin to the warm orange soda and mix until well combined. Allow to cool for 20 minutes.
Pour the mixture over the chilled cheesecake. Chill in the fridge for 1 hour to set before slicing up to serve.
