Fast Rice Pudding

This might just be the quickest, yummiest rice pudding ever.

Ingredients

  • 1/2 cup milk
  • 1/2 can of condensed milk
  • 1/4 cup sugar
  • 2 teaspoons vanilla essence
  • 1 cup cooked rice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup raisins
  • 1 egg
  • Pinch of cinnamon
  • Toasted grated coconut

Steps

  1. Mix the milk with the condensed milk, the sugar and the vanilla essence.
  2. Boil. Lower the heat and add the cooked rice, cinnamon, nutmeg, salt, raisins and the egg. Cover and cook for 5 to 10 minutes.
  3. Remove from heat and place in mason jars or bowls.
  4. Decorate with cinnamon and toasted grated coconut to finish.
