Quick One-Pot Baked Ziti

In the time it takes to make regular pasta, you can have baked ziti as it was intended.

Ingredients

  • Olive oil
  • 1 red onion, diced
  • 1 package of dry ziti
  • 1 jar of tomato puree (about 2 cups)
  • 1 1/2 cups of water
  • 4 heaping tablespoons of fresh ricotta
  • 1 small bunch of fresh basil
  • 1 cup of shredded mozzarella
  • Salt, to taste

Steps

  1. Heat a pan with olive oil over medium-high heat and quickly sauté diced onion until fragrant.
  2. Add the ziti, tomato puree and water. Stir to combine.
  3. Cover and cook according to then pasta box directions, then remove the cover.
  4. Turn oven broiler setting to high.
  5. Place a dollop of ricotta into the pan and stir through the pasta to combine. Tear basil leaves into the pot, and gently stir to wilt it in the pasta.
  6. Fold half of the shredded mozzarella into the pasta to incorporate, then sprinkle the other half on top for a cheesy layer.
  7. Taste and, if necessary, add salt as the cheese might not be salty enough, depending on the brand.
  8. Place the uncovered casserole in the oven on the second-highest rack.
  9. Broil for 5 minutes, or until the top cheese layer is golden.
  10. Serve and enjoy!
