Father's Day Cake

A delicious mocha chocolate chip cake topped with all of Dad's favorite things — what more could he ask for?


  • Cake Batter:
  • 1 cup unsalted butter, room temperature
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups sugar
  • 6 eggs, room temperature
  • 1 1/4 cups sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee powder
  • 1/2 cup chocolate chips
  • Buttercream:
  • 2 cups unsalted butter, room temperature
  • 1 teaspoon vanilla extract
  • 5 cups confectioner's sugar
  • Green food colouring
  • Melted candy melts, in your desired colours
  • Sprinkles


  1. Bake the cake:
  2. 1. Place the butter and sugar in a bowl and beat with an electric mixer until pale and fluffy. Add the vanilla extract and eggs one at a time, mixing with each addition.
  3. 2. In a separate bowl, mix together the flour, baking soda and salt. Add this to the butter mixture in 2 additions, alternating with sour cream. Add the instant coffee powder and chocolate chips and mix until combined.
  4. 3. Divide the batter between 2 greased and floured 9-inch round cake pans and bake at 350F for 25-30 minutes, or until a skewer inserted into the cake comes out clean.
  5. 4. Cool the cakes in the pan for 5 minutes, then transfer to a wire rack and cool completely.
  6. Make the buttercream:
  7. 1. Cream the butter with an electric mixer until pale and fluffy. Add the vanilla extract and beat until combined. Add the confectioner's sugar one cup at a time, then beat for 3-5 minutes, until fluffy.
  8. Assembly:
  9. 1. Slice the tops, bottoms and edges off of each cake, to create flat cakes and remove any excess browning. Then slice each cake in half to create 2 layers per cake.
  10. 2. Place a cake board onto your work surface and place one layer on top. Spread some buttercream on top. Repeat with the other 2 layers of the cake.
  11. 3. Reserve about 1/2 cup buttercream and dye the remaining buttercream green. Coat the cake evenly in buttercream for the surface.
  12. 4. Use a toothpick to gently write out a Father's Day message onto the surface of the cake. This will let you perfect the font and create a template before using buttercream! If you're not happy with it, simply smooth the buttercream and start again.
  13. 5. Place the reserved white buttercream in a piping bag fitted with a small, round piping tip. Pipe the buttercream directly on top of the template you created with a toothpick.
  14. 6. Sprinkle rainbow sprinkles onto the top and bottom edges of the cake, then place the cake in the fridge to chill.
  15. Make the decorations
  16. 1. Using your desired chocolate mold and candy melts to create chocolate decorations for the cake. Use any mold that reflects your father's hobbies or passions! Simply fill the molds to the top with candy melts and place in the refrigerator until set.
  17. 2. Stick these onto the cake, using some extra green buttercream as 'glue' or to add some height and prop them up.
