Florentine Potatoes

No matter how you like potatoes, these are the ones for you.

Ingredients

  • 1 pound fingerling potatoes
  • 6 cloves of garlic, crushed in their skins
  • 10 sage leaves, torn into pieces
  • Extra virgin olive oil, to taste
  • Kosher salt, to taste
  • Red pepper flakes, to taste

Steps

  1. Set oven to 400 degrees F.
  2. Cut the fingerlings into equal but misshapen 1-inch pieces. Soak them in water for at least an hour.
  3. Add the potatoes, crushed garlic, sage, olive oil, salt and red pepper flakes to a large bowl and toss to coat.
  4. Transfer all of that to a baking sheet. Bake for 20 minutes, then mix potatoes around.
  5. Return to oven and bake for an additional 20 minutes, until golden brown and crispy.
