Flourless Chocolate Cake

1972 - 2018. Death by Chocolate.

Ingredients

  • Flourless Cake
  • 6 ounces bittersweet chocolate, preferably 70 percent cacao, chopped
  • 6 large eggs, separated, room temperature
  • 1 cup sugar, divided
  • 1tbsp coffee shot
  • 1/4 teaspoon coarse salt
  • 1 tablespoon pure vanilla extract
  • Ganache
  • 200g dark chocolate
  • 100ml thickened/whipping cream
  • Chocolate Curls
  • 100g dark chocolate
  • 100g milk chocolate
  • 100g white chocolate
  • 3 tbsp melted coconut oil

Steps

  1. Flourless Cake
  2. Preheat an oven to 350F. Line the bottom of a 9 inch springform pan with baking paper. Set aside.
  3. Begin by melting the chocolate in a microwave for 20 seconds at a time, mixing each time until smooth. Set aside to cool but not set.
  4. Beat together the egg yolks and ½ cup of sugar using a hand mixer until thickened and pale. Add espresso shot and salt and mix until well combined. Then add the melted chocolate and beat until well combined.
  5. In a separate bowl, beat the egg whites until foamy. Slowly add the sugar while beating, continue beating until thick and glossy.
  6. Add one spatula of the meringue to the chocolate mixture. Fold in until well combined. Add the rest of the meringue and repeat.
  7. Add the mixture to the prepared pan and bake for 40 minutes. Allow to cool completely once baked.
  8. Ganache
  9. To make the ganache add the chocolate and cream to a microwave safe bowl and microwave for 20 seconds at a time, mixing each time until smooth.
  10. Chocolate Curls
  11. To make the chocolate curls, add each chocolate to a separate bowl and microwave for 20 seconds at a time until smooth.
  12. Add 1 tbsp of coconut oil to each chocolate and mix using a tablespoon. Mix really well.
  13. Pour each chocolate onto a work bench and use a small offset spatula to spread it out thin. Allow to set. Use a bench scraper to scrape the chocolate and create the curls. Set the curls aside onto a baking tray.
  14. Pour the ganache onto the cooled cake and spread around. Finish with the curls.
