Foil Packets Dinners 4 Ways

No pans required for these delicious and satisfying meals of steak and potatoes, BBQ chicken and more.

Ingredients

  • 2 teaspoons butter
  • 2 teaspoons brown sugar
  • 1 pineapple ring, 1/2 inch thick
  • 1 maraschino cherry, stem removed
  • 1 loaf store-bought pound cake, thawed

Steps

  1. Fold heavy duty aluminum foil in half to create a 12x17-inch rectangle, with the dull side facing up and the narrow side facing you. Spray center with nonstick spray.
  2. Place butter in a 3-inch diameter in the center of foil and sprinkle with brown sugar.
  3. Place pineapple ring inside with the maraschino cherry in the middle.
  4. Slice pound cake lengthwise in half, and cut out a circle with a round cookie cutter or a glass to match the size of the pineapple ring.
  5. Place cake round on top of pineapple.
  6. Wrap edges around cake, and bake or grill pineapple side down for 20 minutes, caramelizing the pineapple.

  • 1/2 cup peewee potatoes, halved
  • 1 ear corn, cut into fourths
  • 6 jumbo shrimp
  • 4 1/2-inch slices andouille sausage
  • 1 sprig thyme
  • 1/2 lemon, quartered
  • 1/2 teaspoon salt
  • 1 tablespoon Old Bay seasoning
  • 2 tablespoons pale ale
  • Hot sauce and parsley, to serve

Steps

  1. Preheat oven to 400 degrees.
  2. In a 3-quart saucepan, bring 6 cups water to a boil. Season with salt.
  3. Add potatoes to water and cook for 10 minutes, then add corn and cook an additional 5 minutes. Drain.
  4. In a large mixing bowl, toss with shrimp, andouille, thyme, lemon, salt and Old Bay seasoning.
  5. Fold heavy duty aluminum foil in half to create a 12x17-inch rectangle, with the dull side facing up and the narrow side facing you. Spray center with nonstick spray.
  6. Lay the mixture in the center. Fold in two sides and add pale ale.
  7. Seal, then fold up bottom and top to seal edges (not too tightly-steam should be able to escape).
  8. Cook for 15 minutes until shrimp is cooked through.
  9. Serve with parsley, lemon and hot sauce.

  • 1/2 pounds sirloin steak, cut into 1 1/4-inch cubes
  • 1/2 cup baby red potatoes
  • 1/4 cup carrot, sliced in 1/3-inch rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, smashed
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon chopped thyme
  • 1/4 teaspoon chopped oregano
  • Salt and pepper, to taste
  • 1 tablespoon feta, crumbled
  • 1 tablespoon parsley, chopped

  1. Preheat oven to 400 degrees.
  2. In a large mixing bowl, toss the meat, potatoes, carrot, olive oil, garlic and spices together. Season with salt and pepper.
  3. Fold heavy duty aluminum foil in half to create a 12x17-inch rectangle, with the dull side facing up and the narrow side facing you. Spray center with nonstick spray.
  4. Lay the meat and potatoes in the center of foil. Fold in two sides and seal, then fold up bottom and top to seal edges (not too tightly-steam should be able to escape).
  5. Bake or grill for 45 minutes, until potatoes are cooked through and meat is tender.
  6. Serve with crumbled feta and parsley.

  • 2 chicken drumsticks
  • 3 halved pineapple rings
  • 1/4 cup red onion, 1-inch dice
  • 1/4 cup assorted bell peppers, 1-inch dice
  • Salt and pepper, to taste
  • 3 tablespoons barbecue sauce
  • 1 teaspoon soy sauce
  • Zest and juice of half of a lime
  • 1 clove garlic, grated

Steps

  1. Preheat oven or grill to 400 degrees.
  2. Fold heavy duty aluminum foil in half to create a 12x17-inch rectangle, with the dull side facing up and the narrow side facing you.
  3. Spray center with nonstick spray and lay the halved pineapple rings, red onion and peppers down.
  4. Place the 2 drumsticks over the vegetables.
  5. In a small mixing bowl, stir the barbecue sauce, soy sauce, lime and garlic together.
  6. Drizzle 1 tablespoon on each of the drumsticks.
  7. Fold in two sides of the foil and seal, then fold up bottom and top to seal edges (not too tightly-steam should be able to escape).
  8. Bake or grill on indirect heat for 35 minutes, until chicken is cooked through at 165 degrees. For extra char, throw the packet directly on coals or other direct heat for 5 minutes, or open the packet and broil until slightly charred.
  9. Serve with remaining sauce.
