• 1 cup unsweetened almond milk
  • 2 eggs
  • 1/2 cup unsweetened applesauce, melted
  • 1 teaspoon pure vanilla extract
  • 2 cups spelt flour
  • 1/2 cup dark cocoa powder
  • 1/2 cup coconut sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon sea salt
  • 1/2 cup dark chocolate chips
  • 1 cup fresh strawberries, diced


  1. Preheat oven to 375 degrees F and grease a muffin tin with coconut oil.
  2. In a large mixing bowl, combine the wet ingredients, including the applesauce, eggs, almond milk, and vanilla extract.
  3. In a separate bowl, mix together the the dry ingredients, including the flour, cocoa powder, coconut sugar, baking powder, and sea salt.
  4. Slowly add the wet ingredients to the dry ingredients and stir to combine.
  5. Fold in the strawberries and chocolate chips.
  6. Fill each muffin tin about 3/4 full.
  7. Place in the oven for 12-15 minutes or until the muffins are springy on top.
  8. Remove from oven and allow to cool.
