Fried Stuffed Potatoes

Fried mashed potato balls stuffed with seasoned beef are next-level comfort food.

Ingredients

  • 4 large potatoes, peeled, cubed, and boiled
  • 1 pound ground beef
  • 3/4 cup onion, finely chopped
  • 3 garlic cloves, minced
  • 3 tablespoons raisins
  • 1 red bell pepper, finely chopped
  • 2 tablespoons aji amarillo paste
  • 1 tablespoon aji panca paste
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 3 large eggs
  • 1 cup fine panko crumbs
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • Oil for the pan
  • 1 medium red onion, thinly sliced
  • 1 lime
  • 1 tablespoon cilantro, finely chopped
  • Salt to taste

Steps

  1. In a bowl, mash the potatoes until smooth. Season with a little salt and set aside. Mix the topping ingredients in a bowl and set aside.
  2. In a large skillet, heat a little oil and saute onion and garlic. Once translucent, add ground beef and cook while stirring occasionally.
  3. Add the red bell pepper, aji pastes, raisins, cumin, oregano, salt and pepper. Cook and allow to simmer for about 10 minutes. Remove from heat and set aside.
  4. Scoop some mashed potatoes and flatten on the palm of your hand. Add about 2 tablespoons of the beef mixture, and then bring in the sides to seal the filling. Gently form the stuffed potatoes into ovals and set aside.
  5. Whisk eggs and a little water in one bowl and mix panko, flour, and a little salt in another bowl.
  6. Heat enough oil to cover the stuffed potatoes in a pot. When the oil is ready, coat each stuffed potato in the eggs, then the dry mixture, and repeat once more for a double coating. Fry until golden brown and crispy.
  7. Serve with the onion topping and more chopped cilantro.
