  1. Cookies
  2. Add the sugar, salt and butter to the bowl of a stand mixer. Use the paddle attachment to whip to 2 minutes until light and fluffy.
  3. Add the egg and vanilla extract and whip until well combined. Next, add the flour and milk and mix until the mixture forms a dough.
  4. Split into 5 pieces.
  5. Marbled cookies
  6. To make the marbled cookies, split one of the pieces of dough into two. Colour one pink and the other blue. Put some gloves on to mix each dough until evenly coloured.
  7. Roll both into a log about 20cm in length and twirl around each other. Roll into a bowl and roll out using a rolling pin to about 8mm thin. Use a 5cm cookie cutter to cut out discs of the dough. Place onto a baking tray lined with baking and bake for 15 minutes on 120C. Allow to cool before serving.
  8. Taco cookies
  9. Roll the rest of the dough and cut out discs. Cover 8 cannoli rings with a small piece of parchment paper. Place dough discs over the cannoli rings and place on a baking tray. Bake for 20 minutes on 120C. Allow to cool.
  10. Add green shredded coconut, cookie crumbs and chopped up starburst to finish off the cookie taco look!
  11. Buttercream Flower cookies
  12. Add buttercream frosting to a piping bag fitted with a Leaf tip. Pipe petals of buttercream starting in the centre of the cookie, making your way to the outside.
  13. Royal Icing
  14. Add the egg whites, vanilla extract and powdered sugar into a large mixing bowl and mix until well combined.
  15. Royal icing patterns
  16. To make the royal icing sprinkles, add about 2 tbsp of royal icing into 6 separate bowls. Colour one black, one purple, pink and blue using coloured food gels.
  17. Add each colour to a piping bag, each fitted with a Wilton #4 tip. Pipe any shaped patterns you like onto a piece of parchment paper. Allow to set for 4-6 hours. Bigger shapes will take longer to set.
  18. Pipe a perimeter of white royal icing onto the remaining cookies. Add some of your fancy sprinkles on top.
  19. Spray Paint Cookies
  20. Allow the remaining cookies to set for a couple hours. To make a spray paint pattern on top of the remaining cookies you’ll need a stencil. It can be any pattern or image you like. You could even use letter stencils. Simply place the stencil over the cookies and then spray the edible spray over it. Allow to dry before serving.
