Galaxy Sugar Cookies

These sugar cookies are easy to make and out of this world yummy.


  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • Pinch of salt
  • Icing:
  • 8 cups powdered sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon meringue powder (optional)
  • Blue, pink, violet and white food coloring
  • Piping:
  • 3 tablespoons meringue powder
  • 7 tablespoons water
  • 4 cups powdered sugar


  1. Preheat oven to 350°F.
  2. In a mixer, cream butter with sugar until light and fluffy. Beat in egg and vanilla.
  3. Mix flour, baking powder and salt; add to butter mixture slowly. Dough is ready when it's no longer sticking to the sides of the bowl. If too sticky, add 1-2 tablespoons of flour. Do not over mix.
  4. Line a cookie sheet with parchment paper. Sprinkle a flat surface and the dough with powdered sugar. Roll dough out about 1/4-inch thick. Use a cookie cutter to cut into circles. Use a spatula to transfer cookies to baking sheet. Bake for 8-10 minutes. Let cookies cool for 30 minutes before icing.
  5. Make the icing. Mix all icing ingredients with a hand or stand mixer until slightly runny but not watery. If too watery, add more powdered sugar; too hard, add more water.
  6. Separate icing into 3 bowls. Make one bowl dark blue, one bowl light blue, and one bowl pink. Swirl some light blue, pink and white icing into the dark blue bowl.
  7. Dip cookies into the icing, letting excess drip off before turning over. Return to cookie sheet to let icing harden.
  8. Mix together all ingredients for piping. Use piping to add words or designs to the tops of the cookies.
