"Galinha Escabelada" Chicken Casserole

Creamy, savory, and 100% delicious, this Brazilian chicken casserole will have you saying "mais, por favor!"


  • Olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 chicken breast, shredded
  • Salt, to taste
  • Black pepper, to taste
  • 3 tomatoes, chopped
  • 1 cup tomato sauce
  • 1 cup heavy cream
  • 1/2 bunch of chopped parsley
  • 1 cup cream cheese, softened
  • 6 slices mozzarella cheese
  • 1/2 cup Parmesan
  • Potato sticks to cover


  1. Preheat oven to 390 degrees.
  2. In a frying pan, saute the onion and garlic in olive oil. Add the chicken and season with salt and pepper. Add the chopped tomatoes and saute until they they have almost completely broken down. Add the tomato sauce, cream and parsley.
  3. Transfer to a baking dish and spread out evenly. Cover with a layer of cream cheese, slices of mozzarella, Parmesan and potato sticks.
  4. Bake for 15 minutes.
