Giant Danish Ice Cream Sandwich

Made with 2 huge Danish pastries, this sweet creation is a cross between an ice cream sandwich and cake.


  • 2 large Danish pastries
  • 1 1/2 pounds chocolate ice cream
  • 1 1/2 pounds vanilla ice cream
  • 2 to 3 cups sprinkles, or more if needed
  • Whipped cream
  • Cherries
  • Mint


  1. Place one Danish in the bottom of a round cake pan. Add scoops of ice cream until cake pan is full.
  2. Place the other Danish on top, and refrigerate to set.
  3. Pour sprinkles onto a baking sheet. Remove ice cream sandwich from mold, and slowly turn the exposed ice cream through the sprinkles until well coated.
  4. Garnish with whipped cream, cherries and mint before slicing and serving.
