Giant Peanut Butter Ice Cream Sandwich

This "ice cream sandwich" needs to be eaten like a cake.


  • Cookies
  • 200g mini choc 200g plain (all-purpose) flour
  • 1 tsp baking soda
  • 1/2 tsp. salt
  • 125g  unsalted butter, at room temperature
  • 90g  granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 470 g dark chocolate chips
  • 110g packed brown sugar
  • Ice cream
  • 900ml thickened/whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup crunchy peanut butter
  • Decorations
  • crushed peanuts
  • 200g melted dark chocolate


  1. Ice Cream
  2. Line an 8” cake tin with plastic wrap. Set aside
  3. Add the cream, powdered sugar and vanilla into a large mixing bowl. Using a hand mixer, mix on high speed until you reach soft peaks. Add the peanut butter and mix to stiff peaks.
  4. Add the whipped cream to an 8” cake tin and cover with plstic wrap. Freeze overnight.

  6. Preheat the oven to 180°C. Line 2 8” cake tins with parchment paper.
  7. In a bowl, sift together the flour, baking soda and salt. Beat the butter, brown sugar and granulated sugar until smooth, about 2 minutes. Add the eggs and vanilla and mix on low speed until blended.
  8. Slowly add the flour mixture and mix just until incorporated. Stir in the chocolate chips.
  9. Split the cookie batter between the two cake pans and bake for 30 min. Allow to cool in the cake tins.
  10. Take both cookies out of the cake tins. Place one on serving plate and unwrap ice cream onto the cookie. Then place the second cookie on top and press down firmly.
  11. Add sprinkles to the sides of the ice cream.
  12. Drizzle with melted chocolate and sprinkle with mini choc chips before serving.
