Ingredients
Gingerbread Eggnog White Russian Pudding
- 200g cream cheese (softened)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp powdered ginger
- 125ml eggnog
- 2 tbsp vodka
- 2 tbsp kahlua
- 3 tbsp molasses (plus extra to line rim of glasses)
- 200ml thickened cream
Cream Topping
- 100ml thickened cream
- 50g powdered sugar
- 1 tsp vanilla extract
- 2 golden Oreos or vanilla cookies
Steps
Gingerbread Eggnog White Russian Pudding
- Start by adding cream cheese to a large mixing bowl and whip using a hand mixer until creamy and smooth.
- Next add cinnamon, ginger, vanilla extract, eggnog, vodka, kahlua and molasses. Whip on low speed and increase to high until smooth. Set aside.
- Add thickened cream and vanilla extract into a mixing bowl and mix to stiff peaks using a hand mixer. Add half the whipped cream to the cream cheese mixture. Gently fold using a spatula and then repeat with the other half.
- Add to serving glasses. Chill for 20 min.
- Carefully coat the rim of each glass in some molasses.
Cream Topping
- Add cream, powdered sugar and vanilla extract into a mixing bowl and mix to stiff peaks using a hand mixer.
- Add whipped cream on top of pudding and finish off with some crushed golden Oreos.
