Glitter Donuts

Cake donuts with chocolate ganache and edible glitter.

Ingredients

Donuts

  • 430g - 3 1/2 cups plain (all-purpose) flour
  • 265g - 1 1/4 cups caster (superfine) sugar
  • 3 tsp baking powder
  • 1/2 tsp fine salt
  • 125g - 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 375ml - 1 1/2 cups full-cream (whole) milk
  • 125ml - 1/2 cup vegetable oil
  • 2 tbsp Greek yoghurt (or sour cream)
  • 1 tsp vanilla extract or vanilla bean paste
  • 2 drops green food gel

Ganache

  • Ganache
  • 200g white chocolate
  • 100ml heavy cream
  • 2 drops pink food gel
  • Edible glitter of your choice

Steps

Donuts

  1. Preheat a fan-forced oven to 140°C / 275°F or a conventional oven to 160°C / 320°F. Spry a large donut tray with oil spray and brush to spread evenly. Set aside.
  2. Add the flour, sugar, baking powder and salt to a large mixing bowl and mix with a hand mixer until well combined.
  3. Next, add the softened butter and mix on low speed until the mixture reaches a crumbly, sand-like texture.
  4. Add the eggs, milk, oil, yoghurt, green food gel and vanilla, and mix on low speed until all the dry ingredients are incorporated. Scrape down the side of the bowl and mix for a final 20 seconds.
  5. Add batter to a piping bag and pipe batter into donut holes filling half way. Bake for 12 minutes and then allow to cool for 2 minutes before turning over onto a wire rack. Gently tap on work bench to encourage them to pop out. Allow to cool completely.

Ganache

  1. Add the white chocolate and cream to a large heat proof bowl and microwave for 20 seconds at a time, mixing each time until smooth and melted. Add the pink food gel and mix until evenly coloured.
  2. Dip the cooled down cake donuts into the ganache and place back on the cool rack. Sprinkle with glitter to finish.
