Gluten-Free Cinnamon Apple Walnut Bread

Moist, flavorful and gluten-free apple cinnamon goodness.

Ingredients

Dough

  • 1/2 cup unsweetened apple sauce
  • 1 tablespoon coconut oil
  • 2/3 cup coconut sugar
  • 2 teaspoons vanilla extract
  • 1/2 cups plain Greek yogurt
  • 2 eggs
  • 1 1/2 cup gluten-free multi-use flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup chopped walnuts

Apple Cinnamon Mix

  • 1/2 cup of coconut sugar
  • 2 teaspoons cinnamon
  • 1 peeled and diced apple
  • 1 teaspoon coconut oil
  • 1/8 teaspoon kosher salt

Steps

Dough

  1. Preheat oven to 350°F.
  2. In a mixing bowl mix together the wet ingredients.
  3. Add in the gluten-free flour, baking powder, baking soda and kosher salt. Mix just until combined. Fold in the chopped walnuts.
  4. Spread half of the dough in a loaf pan. Add 1/2 of the apple cinnamon mixture evenly over the dough. Pour the remaining dough on top, followed by the remaining apple cinnamon mixture.
  5. Bake for 40-50 minutes until toothpick comes out clean.

Apple Cinnamon Mix

  1. In a small mixing bowl, add the ingredients for the apple cinnamon mixture, stir well and set aside.
