Gluten-Free Buffalo Chicken Tenders

Ingredients

Gluten-Free Clean Buffalo Chicken Tenders

  • 8 ounces pasture-raised, organic chicken tenders or breast
  • 2 tablespoons ghee
  • 1 cup unsweetened, shredded coconut flakes
  • Cayenne pepper to taste

Marinade

  • 1 pasture-raised, organic egg
  • 2 cloves garlic, minced
  • 1/4 cup Tabasco sauce
  • 1/4 teaspoon sea salt

Steps

Gluten-Free Clean Buffalo Chicken Tenders

  1. Add chicken tenders to prepared marinade and let marinate for up to 30 minutes. Massage marinade into chicken well.
  2. In a large skillet on medium-high heat, add ghee.
  3. Remove chicken from marinade, letting it drip dry. Transfer to a plate, and coat generously with coconut flakes. Sprinkle each side with cayenne pepper to taste and add additional salt if desired.
  4. Place chicken strips in pan and fry for 3 to 4 minutes per side.
  5. Serve with condiment of your choice.

Marinade

  1. In a mixing bowl, combine egg, garlic, Tabasco and salt. Mix well.
