Gluten-Free Tempura Fries

Super crispy, gluten-free tempura fries are all the fried perfection we want.

Ingredients

  • 2 qt oil
  • 3 cups soda water
  • 1 1/2 cups potato starch
  • 2 Idaho potatoes, cut into long, skinny fries
  • Salt to taste

Steps

  1. Heat oil in stock pot to 350°F.
  2. Drop fries into fryer for 5 minutes to blanch and start cooking process. Remove from oil, and let cool at room temperature for 15-20 minutes.
  3. Whisk together soda water and potato starch until starch is fully dissolved in water.
  4. Dip fries into starch mixture, quickly place in oil and deep-fry until lightly golden brown.
  5. Remove and immediately season with salt.
