- 1/4 cup sun dried tomatoes, diced
- 1/2 small red onion, diced
- 1 cup baby spinach, chopped
- 1/4 cup crumbled feta
- 1/4 cup almond meal
- 1 egg
- 1 tbsp. olive oil
Tzatziki Sauce
- 1 cup plain greek yogurt
- 2 tbsp. tahini
- 1 garlic clove, whole
- 1 English cucumber, diced
- 2 tbsp. hemp seed hearts
- 1/4 cup unsweetened almond milk, plus more as needed
- 1 tbsp. fresh dill
- 4 tbsp. lemon juice
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
Toppings
- 1 head iceberg lettuce, for buns
- 1 red onion, thinly sliced
- 1 large tomato, sliced
Steps
Greek Turkey Protein Burgers
- To make the patties, combine the ground turkey, sun-dried tomatoes, red onion, spinach, feta, oregano, almond meal, and egg in a medium bowl and mix until fully combined.
- Shape into patties using your hands.
- Heat olive oil over medium-high heat and cook the patties until cooked through, about 3-5 minutes per side, flipping occasionally.
- Cut the iceberg lettuce into buns. Layer sliced tomatoes on the lettuce followed by the patty, the sauce, sliced red onion, and the other lettuce “bun.”
Tzatziki Sauce
- To make the Tzatziki sauce, combine all ingredients in a food processor and process until smooth.
