Grilled 3-Cheese Sandwich With Tomato

The secret to grilled cheese is using a real grill ... and lots of cheese, of course.

Ingredients

  • 1 loaf French bread
  • 2 large heirloom tomatoes
  • Salt and pepper, to taste
  • Chili flakes, optional
  • 4 ounces fontina cheese, shredded
  • 4 ounces white cheddar, shredded
  • 4 ounces Gruyere, shredded
  • 1 stick unsalted butter, softened

Steps

  1. Preheat the grill to 350°F.
  2. Slice the bread into 1/2-thick slices. Set aside.
  3. Slice the tomatoes into 1/2-thick rounds. Sprinkle with salt and pepper. Set aside.
  4. In a small bowl, combine the 3 cheeses and toss to mix. Sprinkle with a little pepper and chili flakes.
  5. Once the grill is up to heat, grill the tomatoes, 3 minutes per side, until you see grill marks. Remove and let cool slightly.
  6. Next, butter one side of the bread and place it buttered side down. Place of few of the grilled tomato slices on the bread, cutting the larger ones in half. Top with a good amount of the shredded cheese mixture. Top with another slice of buttered bread, buttered side up. Repeat this with the remaining bread, tomatoes and cheese.
  7. Place the sandwiches on the grill and close the lid. Cook for 2-4 minutes per side, keeping a close eye on them since the butter can easily burn.
  8. Remove and let cool slightly before slicing. Enjoy immediately.
