Grilled Chicken Sandwich With Spicy Slaw and Pickled Onions

With spicy slaw, pickled onions and crusty ciabatta rolls, these satisfying sandwiches pack a lot of yum.

Ingredients

Grilled Chicken Sandwich With Spicy Slaw And Pickled Onions

  • 1 red onion, halved and thinly sliced
  • 1/4 cup red wine vinegar
  • 4 large boneless, skinless chicken thighs, preferably organic
  • Salt and pepper for seasoning
  • Vegetable oil for drizzling
  • 4 ciabatta square rolls, cut in half and drizzled with oil
  • 2 avocados, halved and thinly sliced

Dressing

  • 1/2 head red cabbage, thinly sliced
  • 2 jalapeños, halved and thinly sliced
  • 1/2 cup mayonnaise, such as Just Mayo
  • 1/4 cup red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground

Steps

Grilled Chicken Sandwich With Spicy Slaw And Pickled Onions

  1. Combine the red onion and red wine vinegar in a bowl. Stir and set aside. Check occasionally and stir so the onions stay covered in the vinegar. Let sit for at least 30 minutes (the longer the better).
  2. Meanwhile, preheat your grill to 350°F.
  3. Season the chicken thighs with a little vegetable oil and a sprinkling of salt and pepper. Place on the preheated grill on medium-low heat and cook for 15-20 minutes or until cooked through and tender, flipping halfway through.
  4. Just before the chicken is finished, add the rolls to the grill and crisp up on both sides.
  5. To assemble, place half of 1 thinly-sliced avocado on the bottom bun followed by 1 chicken thigh, some pickled onions and a good amount of the spicy slaw. Cover with the top bun and enjoy.

Dressing

  1. Cut cabbage into thin shreds. Add to a large bowl along with the jalapeño slices.
  2. In a small bowl, combine everything for the dressing. Whisk together and add to the cabbage.
  3. Toss together and set aside, tossing every so often. Let sit for at least 30 minutes (the longer the better).
