Grilled Ratatouille Galette

Ingredients

Crust

  • 1 1/4 cups all-purpose flour, sifted and chilled
  • 1 stick (1/2 cup) unsalted butter, cubed and chilled
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Water with a 3-4 ice cubes
  • Egg wash for brushing on crust

Grilled Ratatouille Galette

  • 1 medium yellow squash, sliced
  • 1 medium eggplant, sliced
  • 1 medium zucchini, sliced
  • 1 to 2 medium ripe tomatoes, sliced
  • 1 medium onion, sliced
  • 1/2 ounce goat cheese
  • 2 garlic cloves, finely minced
  • 4 tablespoons olive oil
  • 3 tablespoons fresh parsley, roughly chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste

Steps

Crust

  1. In a bowl, put chilled cubed butter into chilled flour and sugar. Create a crumbly mixture by breaking the butter into smaller pieces and combining them with flour.
  2. Once you have finer crumbles, begin adding iced water (a tablespoon or two at a time) and continue mixing until larger clumps are formed.
  3. Turn out onto a floured surface and gently knead dough into a rough disc.
  4. Wrap in plastic and let chill for 30 minutes.

Grilled Ratatouille Galette

  1. Slice yellow squash, zucchini, eggplant, tomatoes, and onion into thin rounds. Marinate with olive oil, salt, and freshly ground black pepper for 10 minutes. Grill them until tender and set aside to cool. In a small bowl, combine goat cheese and garlic.
  2. Heat grill to 375 degrees F. Lightly flour your surface, and roll out pie dough into a 13 to 14-inch diameter. Place on a cast iron skillet and allow a 2-inch border to hang around the edges.
  3. Spread the goat cheese mixture on the crust, layer grilled vegetables into a circular pattern, and sprinkle parsley on top. Fold over the edges, and brush with egg wash.
  4. Grill for about 30 to 35 minutes, or until the crust is golden brown. Allow to cool slightly before slicing.
