Hot Honey Grilled Drumsticks

These chicken drumsticks are slightly sweet & grilled to perfection - we're not drooling, you are!


  • 3 pounds chicken drumsticks
  • Spice rub:
  • 1 tablespoon light brown sugar
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • Hot honey glaze:
  • 1/3 cup honey
  • 2 tablespoons butter
  • 1 tablespoon soy sauce
  • 1/2 teaspoon cayenne
  • Chopped fresh oregano and parsley, for garnish


  1. Pat the drumsticks dry.
  2. Combine the spice rub ingredients in a small bowl. Season the chicken liberally on all sides. Set aside.
  3. To make the glaze: Bring the honey, butter, soy sauce and cayenne to a simmer in a small saucepan, and stir while cooking until melted together, about 3 to 5 minutes.
  4. Turn all grill burners on high and cover the grill to preheat. This should take about 15 minutes. Leave one burner on high and turn off other burner. You want the grill to be roughly at 350 degrees.
  5. Oil cooking grate. Place the drumsticks on the cooler side of the grill and cover and cook for 50 minutes, rotating and turning the drumsticks once while cooking.
  6. Move chicken to the hot side of the grill and cook, turning, until skin is crisp. Brush with the honey glaze during the last 5 minutes of cooking. Let rest 10 minutes, then garnish with chopped herbs before serving.
