Guacamole-Stuffed Chicken

Wrapped in bacon and stuffed with creamy avocado, this chicken dish is all sorts of yummy.


  • 2 chicken breasts
  • 8 strips of bacon
  • Salt and pepper
  • For the guacamole:
  • 2 ripe avocados, halved
  • 1/2 onion, chopped
  • 1 medium-sized tomato, cut without seeds into cubes
  • 1 chili pepper, diced
  • Juice of half a lemon
  • Fresh cilantro


  1. Prepare the guacamole. Smash the avocados, then add the chopped onion, cubed tomatoes, chili, lemon juice, and a little chopped cilantro. Season with salt and a few drops of olive oil.
  2. Butterfly-cut the chicken breasts so that they open like a book. Pound with a rolling pin to flatten slightly. Season with salt, and fill with guacamole. Carefully roll them up so that the filling doesn't come out. Next, roll in the bacon strips to cover the outsides.
  3. Brown in a skillet on all sides, then place on a baking sheet and finish cooking in the oven at 390°F for 25-30 minutes.
