Covered in layers of spicy cashew cheese, black beans, and chives, you'd never guess nachos were vegan.
Nacho Cheese Sauce:
2 cups cashews
¾ cup water + water to boil
1 tbsp +½ tsp salt
1 tbsp miso paste
½ cup olive oil
2 tbsp nutritional yeast
3 tbsp hot sauce
1 tsp turmeric
½ tsp ground coriander
½ tsp ground cumin
½ tsp salt
1 tbsp agave
½ tsp chili flake
1 tbsp ketchup
1 bag of your favorite tortilla chips
2 tbsp chopped chives
½ can black beans, strained and rinsed
In a saucepan, combine cashews, 1 tbsp salt, and enough water to cover cashews. Bring to a boil, then lower to a simmer for 5 minutes. Strain cashews.
In high powered blender, combine cashews, oil, miso, spices, nutritional yeast, ½ tsp salt, agave, chili flakes, ketchup, and hot sauce. Blend on high until completely smooth.
On a large plate, layer tortilla chips, black beans, and chives. Pour a generous drizzle of warm sauce over chips. Serve immediately!
