Haha It's Vegetables | Bangin’ Vegan Nachos

Covered in layers of spicy cashew cheese, black beans, and chives, you'd never guess nachos were vegan.

Ingredients

  • Nacho Cheese Sauce:
  • 2 cups cashews
  • ¾ cup water + water to boil
  • 1 tbsp +½ tsp salt
  • 1 tbsp miso paste
  • ½ cup olive oil
  • 2 tbsp nutritional yeast
  • 3 tbsp hot sauce
  • 1 tsp turmeric
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp salt
  • 1 tbsp agave
  • ½ tsp chili flake
  • 1 tbsp ketchup
  • For Nachos:
  • 1 bag of your favorite tortilla chips
  • 2 tbsp chopped chives
  • ½ can black beans, strained and rinsed

Steps

  1. In a saucepan, combine cashews, 1 tbsp salt, and enough water to cover cashews. Bring to a boil, then lower to a simmer for 5 minutes. Strain cashews.
  2. In high powered blender, combine cashews, oil, miso, spices, nutritional yeast, ½ tsp salt, agave, chili flakes, ketchup, and hot sauce. Blend on high until completely smooth.
  3. On a large plate, layer tortilla chips, black beans, and chives. Pour a generous drizzle of warm sauce over chips. Serve immediately!
