Think of this ridiculously cheesy flatbread as an epic Hot Pocket.

Ingredients

  • 1 teaspoon sugar
  • 1/4 cup lukewarm water
  • 1 1/4 teaspoon dried yeast
  • 1 1/2 cups plain flour
  • 1/2 teaspoon salt
  • 1/3 cup lukewarm milk
  • 1 tablespoon olive oil
  • 8 Swiss Cheese slices
  • 4 Ham Slices
  • Mayo
  • Mustard

Steps

  1. Combine the sugar and water in a small bowl. Sprinkle over the yeast and then set aside for 7-8 minutes or until foamy. Add the flour and salt in a large bowl.
  2. Make a well in the centre and add the yeast mixture and milk. Using a wooden spoon, mix together until a rough dough forms.
  3. Pour out onto a lightly floured surface and knead until smooth and elastic. Place in a lightly oiled bowl, turning to coat in the oil. Cover with plastic wrap and let rise for 30 minutes.
  4. Divide the dough into 2 equal portions. Working with one portion at a time roll it out onto a lightly floured surface to an 8 X 14 inch rectangle and about 1/8 inch thick.
  5. Spread a thin layer of mayo onto half of the rectangle leaving 1/2 an inch at the border. Layer 2 cheese slices down, then 2 ham slices down and then top with a good squirt of mustard and 2 more cheese slices. Fold the dough over to enclose the filling and then press the edge to seal.
  6. Preheat a large non-stick fry pan over medium heat and lightly brush with a bit of oil. Cook the sandwich one at a time for 2-3 minutes each side. Cut into quarters to serve.
