Tofu and Amazake Tiramisu

Tofu makes for a yummy dessert! Sweetened with a Japanese rice drink, this super silky tofu is layered with sponge cake and matcha syrup.


  • Matcha Sauce:
  • 1/2 teaspoon matcha powder
  • 1 teaspoon cane sugar
  • 100 milliliters hot water
  • 1/2 tablespoon rum
  • Cream:
  • 300 grams soft tofu
  • 80 milliliters amazake (fermented rice drink)
  • 2 tablespoons cane sugar
  • 1 teaspoon lemon juice
  • 2 tablespoons sweetened condensed milk
  • Vanilla extract
  • Other ingredients:
  • 200 grams Castella sponge cake
  • Matcha powder
  • Gold leaf


  1. Before starting, prepare the tofu by draining it of excess moisture and cut the Castella cake into small pieces.
  2. Combine all ingredients for the cream in a blender and mix well.
  3. In a bowl, combine ingredients for the matcha sauce and mix until combined.
  4. Arrange castella, matcha sauce and cream into individual serving bowls.
  5. Sprinkle matcha powder on top and decorate with gold leaf.
