Heart Cookie Tart

This Earl Grey cookie tart is the best way to say "I love you."

Ingredients

Tart Dough

  • 80g unsalted butter
  • 45g powdered sugar
  • A pinch of salt
  • 20g almond poodle
  • 30g eggs, beaten
  • 130g cake flour
  • 20g bread flour
  • 10g cocoa powder

Earl Grey Tea Cheese Filling

  • 130ml heavy cream
  • 10g earl grey tea leaves
  • 250g mascarpone cheese
  • 10g corn starch
  • 50g cane sugar
  • 2 eggs

Toppings

  • Whipped cream, as needed
  • Thyme, as needed
  • Cookie crumbs, as needed

Steps

Tart Dough

  1. Make the Tart Dough in advance.
  2. In a bowl, combine unsalted butter, powdered sugar, and salt. Mix well.
  3. Mix in almond poodle.
  4. Add in beaten eggs and mix until it is thoroughly combined.
  5. Add cake flour and bread flour. Fold them in and mix lightly with a spatula.
  6. Once the dough is made, take a handful and set it aside as the Plain Dough.
  7. Add cocoa powder to the remaining dough and mix thoroughly. Set it aside as the Cocoa Dough.
  8. Use a rolling pin to roll out each dough. Let sit in the refrigerator.
  9. Cut out the Plain Dough using heart-shaped cutters.
  10. Grind the Earl Grey tea leaves into fine pieces.
  11. Brush the round cake ring with butter.
  12. Cut out the Cocoa Dough with a heart-shaped cutter.
  13. Fill the holes with the heart-shaped Plain Dough. Roll out the dough with a rolling pin.
  14. Place the Cocoa Dough into the bottom of the round cake ring (brushed with butter). Fill the sides of the ring with the heart dough from step 13.
  15. Trim off any excess dough and pierce the bottom dough using a fork.
  16. Using a pastry brush, apply beaten eggs to the bottom dough. Bake in the oven at 190°C for 15 minutes and make the tart crust.
  17. In a pot, combine heavy cream and earl grey tea leaves. Bring to a boil and turn off heat. Let sit until cooled.
  18. Pour the mixture into the tart crust and bake in the oven for 160 °C for 50 minutes. Remove from the oven and let cool.
  19. Cut the tart and top with whipped cream, thyme, and cookie crumbs.

Earl Grey Tea Cheese Filling

  1. In a bowl, mix together mascarpone cheese, corn starch, and cane sugar. Add in eggs and the earl grey milk tea from step 17. Mix well.
