Hidden Heart Funfetti Cake

You won't be able to hide your love for this light and fluffy funfetti cake.

Ingredients

  • Pink Cake:
  • 215 grams flour
  • 1 1/2 teaspoon baking powder
  • 132 grams sugar
  • 187 milliliters milk
  • 65 milliliters oil
  • 60 grams butter
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 4 drops pink food gel
  • Funfetti Cake:
  • 429 grams all-purpose flour
  • 265 grams caster (superfine) sugar
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 375 milliliters of milk
  • 125 milliliters vegetable oil
  • 125 grams unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup funfetti + 2 cups to decorate
  • Buttercream frosting:
  • 500 grams unsalted butter, softened and at room temperature
  • 1020 grams soft icing sugar mixture (sifted after it's weighed)
  • 2 tablespoons milk (room temperature)
  • 1 teaspoon vanilla extract

Steps

  1. Buttercream Frosting:
  2. Use a stand mixer or hand mixer to soften butter in a large bowl and mix for 5 minutes so it gains some volume and goes pale in colour.
  3. Add half the icing sugar mixture and mix until it's incorporated into the butter, then add the rest of the icing sugar along with 2 tablespoons of milk and a tablespoon of vanilla extract.
  4. Pink Cake:
  5. Preheat a fan-forced oven to 160C (320F) or 180C (356F) for a conventional oven. Line a rectangle tin (20x15 centimeters) with baking paper. Set aside.
  6. Add all dry ingredients into a large mixing bowl and either sift to combine or use a hand mixer or whisk. Add softened butter and mix until mixture resembles sand. Add all wet ingredients including food dye and mix until no dry ingredients are visible.
  7. Add batter to baking tin and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Allow to cool completely on a wire cooling rack before using a heart-shaped cookie cutter to cut out hearts. You'll need enough to go the length of the loaf tin.
  8. Funfetti Cake:
  9. Repeat same process as pink cake. but replace pink food dye with funfetti sprinkles.
  10. Add half the batter to a loaf tin lined with baking paper. Add pink hearts along the length of the loaf, submerging them in the batter. Bake for 40-45 minutes, or until a toothpick inserted comes out clean. Allow to cool completely on a wire cooling rack before frosting.
  11. Use an offset spatula to frost cake, ensuring it's even on all sides. It doesn't have to be perfect, but try to get the frosting even. Place cake in a baking tray and add funfetti sprinkles to the side of the frosting using your hands.
