Homemade Chocolate Fudge Pop-Tarts

And here we thought normal Pop-Tarts were awesome already.

Ingredients

Fudge Filling

  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup packed brown sugar
  • 2/3 cup milk (I used 2 percent)
  • 1/4 teaspoon salt
  • 6 ounces milk chocolate, chopped
  • 2 tablespoons unsalted butter, cut into small cubes
  • 2 teaspoons vanilla extract

Homemade Pop Tarts

  • 3 cups flour
  • 3 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 1/2 sticks (3/4 cup) cold butter, cut into 1/2 -inch pieces
  • 1/2 cup ice cold water

Frosting

  • 2 cups powdered sugar
  • 2 tablespoons meringue powder
  • 1 tablespoon vanilla extract
  • 2 tablespoons cocoa powder
  • 3-6 tablespoons water
  • 2 ounces dark or milk chocolate, melted
  • Pearl sugar, for sprinkling

Steps

Fudge Filling

  1. Stir together cocoa powder, brown sugar, milk, salt and half of the chopped milk chocolate.
  2. Place in a small sauce pan and cook over medium heat, stirring, until chocolate is melted.
  3. Continue to cook mixture at a low boil, stirring occasionally for 5 minutes.
  4. Remove pan from heat, add remaining chocolate, butter and vanilla and stir until smooth.
  5. Set in the fridge to cool for at least 20-30 minutes.

Homemade Pop Tarts

  1. In a large mixing bowl, combine the flour, cocoa powder and salt.
  2. Add chunks of the butter and mix with a pastry blender or your fingers until the mixture is crumbly.
  3. Gradually add the water until the mixture is moistened and a dough forms.
  4. Place the dough in between two large sheets of parchment paper and roll to flatten.
  5. Cut the dough into rectangles, about 4 1/2 x 3 inches in size.
  6. Place a tablespoon of filling on one half of the rectangle.
  7. Lay the other half of the dough over the filling and seal the edges by crimping with the back of a fork.
  8. Repeat until all the dough has been used, saving the scraps and re-rolling to make more rectangles.
  9. Place the pop tarts on two baking sheets lined with parchment paper. Cover and place in the freezer for 15 minutes to chill.
  10. Preheat the oven to 375 degrees F.
  11. Once the pop-tarts have chilled, bake for 15-18 minutes.
  12. Remove from oven and allow to cool completely before frosting.

Frosting

  1. In a large mixing bowl, whisk the powdered sugar, meringue powder, vanilla, cocoa powder and 4 tablespoons water until smooth and combined.
  2. Stir in the melted chocolate. If frosting seems too thick, thin with more water as needed.
  3. Spread a layer of frosting on top of the cooled pop-tarts.
  4. Sprinkle with pearl sugar.
  5. Place on a baking sheet and allow the tarts to harden uncovered, about 1-2 hours.
