Homemade Pecan Pie Bread Pudding

When everyone is bringing over pies this holiday season, mix things up with this amazing bread pudding.

Ingredients

  • 8 cups challah bread, cubed
  • 4 eggs
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 cups whole milk
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup pecans, roughly chopped
  • 2 tablespoons butter, melted
  • 1/2 cup corn syrup
  • 1/4 cup maple syrup
  • 1/3 cup dark brown sugar, packed
  • Caramel sauce, for serving

Steps

  1. Preheat oven to 375°F. Spray a 9x13 glass baking dish with cooking spray.
  2. Cut challah into cubes and set aside.
  3. In a large mixing bowl, whisk eggs and granulated sugar until frothy, then add vanilla, milk, salt and cinnamon. Stir to combine.
  4. In another bowl, stir pecans with melted butter, corn syrup, maple syrup and dark brown sugar.
  5. Add half the challah to the bottom of the baking pan. Sprinkle half the pecan mixture on top. Cover with challah and layer the rest of pecan mixture on top.
  6. Pour milk mixture over the bread, and gently press the bread down to coat. Soak for 10 minutes.
  7. Bake for 40-45 minutes, or until golden brown.
  8. Serve drizzled with warm caramel sauce.
