Homemade Snickers Cupcakes


  • 1/2 cup butter, softened at room temperature

  • 3/4 cup white granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla

  • 2 teaspoons instant coffee

  • 1/2 cup warm milk

  • 3/4 cup all-purpose flour

  • 1/4 cup dark cocoa powder

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • For frosting:

  • 2 sticks unsalted butter, softened at room temperature

  • 1/4 cup dark cocoa powder

  • 3 - 4 cups confectioner's sugar

  • Pinch of salt

  • 1/2 teaspoon vanilla

  • Heavy cream, if necessary

  • For filling and garnish:

  • 1 jar marshmallow crème

  • Caramel sauce

  • Salted peanuts


  1. Preheat oven to 350°F and line a 12-count cupcake pan with liners.

  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs and vanilla and continue to mix until creamy. Dissolve the instant coffee in the warm milk and add to the mixture.

  3. In a separate bowl, combine the dry ingredients: flour, cocoa powder, baking powder and salt. Sift the mixture to get rid of any clumps. Add the dry ingredients into batter and whisk by hand just until the flour is incorporated.

  4. Fill each liner to about 3/4 full and bake the cupcakes for 25-28 minutes, or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool before frosting.

  5. Prepare the frosting. Place softened butter in a mixer bowl and whisk on high speed until light and fluffy. Add cocoa powder and vanilla, then add about half the confectioner's sugar and mix. Add other half of sugar and the salt and continue to mix. Whisk on high speed until frosting is fluffy. If frosting is too thick, thin out with a tablespoon of heavy cream. Transfer frosting into a pastry bag.

  6. Once cupcakes are cool, use an apple-corer, a large pastry tip or a melon baller to scoop out the center. Pipe marshmallow crème into the center and add a few salted peanuts.

  7. Frost the top of each cupcake, then drizzle with caramel sauce and garnish with salted peanuts.
