Honey Walnut Shrimp

Shrimp is at its best when covered in a sweet, nutty and creamy sauce.

Ingredients

  • Walnut halves
  • 1 cup water
  • 2/3 cup sugar
  • 5 egg whites
  • 1/2 cup cornstarch
  • Pinch of salt
  • 1 pound large shrimp, peeled and deveined
  • Vegetable oil, for frying
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon sweetened condensed milk
  • Cooked rice

Steps

  1. Bring walnut halves, water and sugar to a boil for 2 minutes. Remove walnuts with a slotted spoon and let them dry on a piece of parchment paper. Set aside.
  2. Preheat oil to 375°F.
  3. In a large bowl, whisk the egg whites until frothy and add the cornstarch and salt to make a batter.
  4. Dip shrimp into the batter and fry for about 2-3 minutes, until shrimp is cooked and the outsides are nice and crispy. Set aside on a paper towel and season with salt.
  5. In a large bowl, whisk together mayonnaise, honey and sweetened condensed milk.
  6. Add shrimp and walnuts to the bowl. Toss until all the shrimp are coated and serve with rice.
