Horchata Latte

Stay in the fall spirit with a latte you can still enjoy all year long.

Ingredients

  • 1 cup long-grain white rice, rinsed
  • 1 ounce cinnamon sticks (canela)
  • 6 cups water
  • 2 tablespoons ground coffee (dark roast)
  • 1/2 cup hot water
  • 3/4 cup simple syrup
  • Whipped cream and cinnamon, to serve

Steps

  1. Add rice, cinnamon sticks and 3 cups water to blender.
  2. Blend until rice is broken down, like coarse, pebble-like sand.
  3. Pour mixture into a large container. Add remaining 3 cups water. Stir to combine. Cover and let sit at room temperature for 3 hours.
  4. Strain mixture when ready to use. Steam 1 1/2 cups of the mixture in a medium saucepan over medium heat.
  5. Using a Vietnamese coffee filter, add ground coffee and tamp down. Add hot water and fill to top. Let it drip into a mug until empty.
  6. Add simple syrup to mug, followed by steamed horchata. Garnish with whipped cream and a cinnamon stick. Sprinkle with more ground cinnamon.
