Ingredients

Hot and Spicy Popcorn Chicken

  • 1/2 pound (about 250 to 300 grams) of boneless chicken fillet
  • 1 large egg
  • 2 tablespoons tequila
  • 2 tablespoons corn flour
  • 1 cup tortilla chips, crushed
  • Oil for deep frying
  • Avocado, diced
  • Cilantro
  • Queso Fresco

Mole

  • 3 dried chiles
  • Handful of tortilla chips
  • Olive oil
  • 1 medium onion, chopped
  • Salt
  • 1 clove garlic, miced
  • 1 tablespoon smooth peanut butter
  • 1 cup chicken stock
  • 90 grams dark chocolate
  • Black pepper

Steps

Hot and Spicy Popcorn Chicken

  1. Rehydrate the chillies in 1 cup of hot water for 15 minutes. Then drain and set aside.
  2. Chop chicken to bite sized pieces and place in a bowl. Add the egg and tequila and mix then sprinkle over corn flour and mix.
  3. Pour the crushed chips. Mix well and set these aside for about 5 minutes.
  4. Heat oil to 350 F and deep fry meat evenly till golden 2-3 minutes. Keep stirring for even frying.
  5. Drain popcorn chicken on a paper towel and set aside.
  6. Serve the chicken with the mole on the side and sprinkle with avocado, cilantro and the queso.

Mole

  1. In a skillet, heat oil over medium heat and toss in the onion and garlic. Season with salt and cook till translucent.
  2. Add to a blender with the chillies, chips, and peanut butter. Pour over the chicken stock and blend until smooth. (You can also use and immersion blender in the saucepan.)
  3. Transfer back to the saucepan and bring to a boil, then reduce to medium and simmer for 5 minutes.
  4. Finally, add in the chocolate and pepper and stir to melt.
