Hot Apple Cider Affogato With Caramel Glass

Boozy, fancy and delicious, this autumn treat has got it all.

Ingredients

Hot Apple Cider

  • 4-5 cups apple juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3 ounces spiced rum (optional)
  • Cinnamon sticks

Caramel Glass

  • 2 cups of sugar

Ice Cream

  • Vanilla Ice Cream

Steps

Hot Apple Cider

  1. In a small pot heat the apple juice over low heat.
  2. Whisk in the spices to remove and clumps.
  3. Once it's hot add the rum and set aside.

Caramel Glass

  1. Line a baking sheet with parchment or tinfoil and grease.
  2. In a pot add the sugar and heat over low heat. Stir continuously.
  3. The edges will begin to melt and bubble first but continue to stir. The mixture will eventually melt evenly into caramel.
  4. As soon as the mixture becomes smooth, remove from the heat.
  5. Dip a spoon into the caramel and then drizzle a thin stream of the caramel over the baking sheet in a crosshatch pattern.
  6. Repeat several times and then set aside.

Ice Cream

  1. To plate, place a scoop of ice cream in the center for your bowl or mug and then delicately place the caramel glass over top.
  2. Add a cinnamon stick to the side and serve will the apple cider on the side to let guests pour the mixture over the ice cream.
