Hot Chocolate Cookie Mugs

Chocolate cookies filled with fudge are the best way to get your hot cocoa fix.

Ingredients

  • 1 3/4 cups plain flour
  • 1/2 cup cocoa powder
  • 2 teaspoons cinnamon
  • 1 tablespoon Ovaltine, malt
  • 125 grams butter, softened
  • 85 grams icing sugar
  • 1 egg, at room temperature
  • 1/2 teaspoon vanilla extract
  • Hot fudge
  • Red sanding sugar
  • Whipped cream, in a can

Steps

  1. Preheat oven to 350˚F.
  2. In a medium bowl, combine the flour, cocoa, cinnamon, and Ovaltine. Mix well.
  3. Beat the butter and icing sugar with an electric mixer until pale and creamy.
  4. Add in the egg and vanilla and beat until well combined.
  5. Add in the flour mixture and stir.
  6. Then, use your hands to mix until well combined.
  7. Roll out the cookie dough into a rectangle 1 centimeter thick and slice into short strips.
  8. Grease stainless steel miniature cake tins.
  9. Press one strip of cookie dough along the sides of the tins and add a small amount to the bottom.
  10. Use a finger to seal any cracks and to form a smooth interior.
  11. Chill for at least 30 minutes.
  12. Roll aluminium foil into short cigar shapes, and place them in the center of each tin.
  13. Bake for about 8-9 minutes.
  14. Remove from oven and allow to cool. Carefully remove the cookie cups from the shot glasses.
  15. Fill each cup with hot fudge and over-fill slightly to allow for drips down the side.
  16. Sprinkle with red sanding sugar.
  17. Top with a squirt of whipped cream.
