Christmas Rocky Road Brownies

Christmas can be a rocky road, like these brownies layered with rum-infused rocky road and plenty of marshmallows!


  • Brownie Layer
  • 75g plain flour
  • 75g cocoa
  • 300g castor sugar
  • 300g butter
  • 300g chocolate
  • 6 eggs
  • Rocky Road Layer
  • 400g dark cooking chocolate (melted)
  • 3 tbsp coconut oil
  • 1 cup glace cherries
  • 1 cup shredded coconut
  • 1 tsp rum or rum essence
  • 1 cup mini marshmallows + extra to sprinkle
  • 100g red choc melts
  • 100g green choc melts


  1. Brownies
  2. Preheat a fan forced oven to 175C (340F). Spray an 8 by 5 inch square pan with non stick cooking spray and lay the bottom with parchment paper. Set aside.
  3. Add butter and chocolate to a microwave safe bowl. Microwave for 20 seconds at a time and repeat until it becomes smooth.
  4. Add flour, eggs, sugar to a large mixing bowl and mix on low speed using the paddle attachment or a wooden spoon until everything is combined.
  5. Slowly add chocolate and butter mixture while mixing on low speed.
  6. Add batter to baking tin lined with baking paper. Bake for 30 min or until a pick comes out with moist crumbs.
  7. Rocky Road Layer
  8. Melt chocolate, rum and coconut oil in the microwave. Mix until well combined.
  9. Add coconut, cherries and marshmallows. Mix until well coated.
  10. Add rocky road onto the brownie layer. Drizzle with red and green choc melts and sprinkle with extra marshmallows. Chill
  11. Cut into 8 squares.
