Mini Tomato Tarts

Caprese baked in a flaky crust is the appetizer your dinner guests have always craved.

Ingredients

  • Extra virgin olive oil
  • 1 clove of garlic, grated
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili flakes
  • 1 sheet of puff pastry
  • Ball of mozzarella, sliced
  • 1 large tomato, sliced
  • Grated Parmesan cheese
  • Fresh basil

Steps

  1. Preheat oven to 425°F.
  2. In a small bowl, mix together olive oil, garlic, oregano and chili flakes. Set aside.
  3. Unfold pastry sheet onto a floured surface. Using a cookie cutter, cut out 3-inch circles and set onto a baking sheet.
  4. Using a slightly smaller cookie cutter, score a circle about 1/4 inch in from the end.
  5. Use a fork to poke small holes on the surface inside the scoring line.
  6. Brush with a bit of the oil and add mozzarella cheese.
  7. Top with a large slice of tomato, brush with more oil and bake for 20 minutes.
  8. Sprinkle with Parmesan, fresh basil and serve.
