Italian Stuffed Squid

Filled with garlicky rice and cheese, and topped with tomato sauce, this seafood dish is packed with flavor.

Ingredients

  • 2 whole squid, cleaned
  • Stuffing:
  • 80 grams white rice, washed and drained
  • 1 clove garlic, minced
  • 3 sprigs Italian parsley
  • 20 grams parmesan cheese
  • 60 milliliters water
  • Salt
  • Sauce:
  • 1/2 onion, chopped
  • 1 clove garlic, peeled
  • 1 sprig rosemary
  • 1 can diced tomatoes (280g)
  • 200 milliliters water
  • 1 teaspoon bouillon granules
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • Pepper

Steps

  1. Cut off the tentacles from the body of the squid. Cut the tentacles so they are separated into individual pieces.
  2. In a bowl, combine the tentacles and all the ingredients for the stuffing and mix well. Stuff this mixture into the body of the squid. Secure with wooden skewers and set aside.
  3. In a frying pan, cook the olive oil and garlic until fragrant. Then add in chopped onions and cook saute until just beginning to soften. Add in the rest of the ingredients for the sauce and mix to combine. Place stuffed squid on top and cook covered for 40 minutes.
  4. Slice and serve with sauce.
